Cake and Dessert Ideas for Mother's Day
Although it's often more practical to go to your favourite cake shop and get something there, cooking for someone is a true act of love, and setting aside some time to bake a cake for Mother’s Day will make the day even more special.

Coconut and dark chocolate balls
Whether it's the mouth-watering topping or the freshness of the coconut that instantly reminds us of summer, these coconut and dark chocolate balls are simply irresistible. You can keep them in the fridge for a couple of days – if you can, because they’ll be gone in no time!
Coconut and dark chocolate balls recipe
Difficulty: easy
Preparation time: 20 minutes
Ingredients:
5.29 oz dark chocolate;
5.29 oz coconut flour;
3 tablespoons seed oil;
2 egg whites;
1.76 oz sugar.
How to make coconut and dark chocolate balls
First, you need to melt 3.52 oz of dark chocolate over a bain-marie with 2 tablespoons of seed oil, then set it aside and leave to cool for a few minutes.
Once the chocolate has cooled, gently incorporate the coconut flour and sugar, stirring with a spatula until you can work the mixture with your hands.
Place baking cups (paper or silicone) on a baking tray, scoop out some of the mixture and form into suitably sized balls, then place in the baking cups.
Bake the balls in the oven at 170 degrees for 10 to 12 minutes, then leave to cool at room temperature.
Melt the remaining dark chocolate over a bain-marie with a tablespoon of seed oil, pour it over the balls and place them in the fridge for half an hour.
If you’d prefer to make a coconut and dark chocolate cake instead of balls, simply prepare a shortcrust base and use a cake tin instead of baking cups. To make the topping even sweeter and more delicious, you can replace the dark chocolate with white chocolate or—for extra crunch—dark chocolate with hazelnuts!
Heart-shaped chocolate and strawberry mousse cake
Although the process may seem a bit complex, don't be fooled: the recipe for this cold chocolate and strawberry cake is easy to follow, even if you’re not a great pastry chef. Simply follow all the steps and use strawberries that aren't too ripe, as not only will they give the cake the right texture, their slightly tart flavour will combine perfectly with the sweetness of the chocolate. In any event, when your Mother's Day cake is shaped like a heart, she won't care about any imperfections!

Preparation time: 40 minutes + 2 hours resting time in the fridge
Ingredients for the base:
3 eggs
3,17 oz sugar
2.11 oz flour
0.70 oz bitter cocoa
1 teaspoon baking powder
Salt as required
Ingredients for the mousse:
10.58 oz fresh cream
11.11 oz dark chocolate
7.93 oz fresh whipped cream
a dozen strawberries for decoration
How to make the chocolate and strawberry mousse cake
Making the base
Beat the egg yolks together with the sugar until the mixture is light and fluffy.
Whip the egg whites until stiff with a pinch of salt, then gently fold the two mixtures together before adding the sifted flour, cocoa, and baking powder, and stirring with a spatula.
Grease a cake tin (heart-shaped if possible!) and pour in the mixture. Level the mixture out, then bake in a static oven at 180 degrees for 10 minutes. Once cooked, leave to cool at room temperature.
Making the mousse
Melt the fresh cream in a saucepan and add the chopped dark chocolate, then leave to cool completely.
Once cooled, work the whipped cream into the mixture, folding gently from the bottom upwards to prevent the cream from splitting.
Assembling the chocolate and strawberry cake
Take the cake tin containing the base you’ve made and decorate around the edges with the strawberries (cut in half), making sure the white part is facing inwards.
Pour the mousse into the cake tin, spread over and level with a spatula and place in the fridge for a couple of hours.
Once cooled, you can top your Mother's Day cake with fresh strawberries, which should be added just before serving to prevent them from discolouring. If you want to pamper your mum with extra chocolate, you can melt dark chocolate over a bain-marie for a delicious coating or sprinkle the cake with a generous amount of bitter cocoa powder.
